- 1.5 kg stewing beef
- 2 onions
- 2 sticks of celery
- 2 carrots
- 2 cloves of garlic
- 2 bay leaves
- 1 tablespoon tomato puree
- 500 ml beef stock
- 1/2 bottle of red wine
- 2 tablespoons plain flour
- olive oil
- sea salt
- freshly ground black pepper
Equipment
- A large casserole dish with a lid
- A sharp knife
- A chopping board
- A wooden spoon
Method
- Preheat the oven to 180°C/350°F/gas 4.
- Cut the beef into 5cm cubes and season with salt and pepper. Dust with flour.
- Heat a large casserole dish over a medium-high heat and add a good lug of olive oil.
- Add the beef to the casserole dish and cook until browned on all sides.
- Remove the beef from the casserole dish and set aside.
- Add the onions, celery, carrots and garlic to the casserole dish and cook until softened.
- Return the beef to the casserole dish and add the bay leaves, tomato puree, beef stock and red wine.
- Bring to the boil, then cover with a lid and place in the oven for 2.5-3 hours, or until the beef is tender.
- Season to taste and serve with crusty bread or mashed potatoes.
