Ingredients
2 cups granulated sugar
1/2 cup light corn syrup

2 large egg whites

Method
1. Line a baking sheet with parchment paper or wax paper and set aside. 2. In a heavy-bottomed saucepan, combine the sugar, corn syrup, and water. Cook over medium heat, stirring constantly, until the sugar dissolves. 3. Once the sugar has dissolved, stop stirring and let the mixture come to a boil. Insert a candy thermometer and continue boiling until the temperature reaches 260°F (hard ball stage). 4. While the sugar mixture is boiling, beat the egg whites with an electric mixer until stiff peaks form. 5. Once the sugar mixture reaches 260°F, remove it from the heat and let it cool for a minute or two. 6. With the mixer running on low speed, slowly pour the hot sugar mixture into the egg whites. Be careful not to let the hot sugar touch the mixer or it will splatter. 7. Once all the sugar mixture is incorporated, turn the mixer up to high speed and beat until the mixture becomes thick and glossy. This should take about 5 minutes. 8. Add the vanilla and salt and beat for another minute or two. 9. If using pecans, fold them into the mixture with a spatula. 10. Using a spoon or cookie scoop, drop the mixture onto the prepared baking sheet. Let the divinity cool and harden for several hours before serving.
Notes
Divinity can be temperamental and may not set up properly if the humidity is too high or if it's raining. If you're having trouble getting it to set up, try making it on a dry day or adding a little more sugar to the mixture.
It's possible, but it's much more difficult to get the temperature exactly right without a thermometer. If you don't have one, try the cold water test. Drop a small amount of the hot sugar mixture into a cup of cold water. If it forms a hard ball, it's ready.
Can I use a hand mixer instead of an electric mixer?
Yes, but it will take longer to beat the mixture to the right consistency. Be prepared to beat it for at least 10-15 minutes with a hand mixer.
