Ingredients

  • 4 medium-sized beets
  • 1 can of chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves of garlic, minced

  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped fresh dill
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of olive oil

Method

  1. Preheat your oven to 375°F (190°C).
  2. Wash the beets and wrap them in aluminum foil. Place them on a baking sheet and roast them in the oven for about 45 minutes, or until they are tender.
  3. While the beets are roasting, heat the olive oil in a frying pan over medium heat. Add the chopped onion and garlic and sauté for about 5 minutes, or until the onions are translucent.
  4. In a food processor, combine the roasted beets, sautéed onion and garlic, drained chickpeas, breadcrumbs, parsley, dill, cumin, smoked paprika, salt, and pepper. Pulse until the mixture is well combined and has a ground meat-like texture.
  5. Shape the mixture into 4 patties.
  6. Heat a non-stick frying pan over medium heat. Add the patties and cook for about 5-7 minutes on each side, or until they are golden brown and crispy.
  7. Remove from the pan and serve on a bun with your favorite toppings.

Notes

If you have leftover beet burger patties, you can store them in an airtight container in the fridge for up to three days. You can also freeze them for up to three months.
