- 6 tablespoons butter
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups chopped celery

- 1/2 teaspoon black pepper

- 1/4 teaspoon ground nutmeg
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon cornstarch
- 1 tablespoon water

Method
- Melt the butter in a large soup pot over medium heat.
- Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the celery, salt, pepper, thyme, and nutmeg and sauté for another 5 minutes.
- Add the chicken broth and bring the mixture to a boil. Reduce heat and simmer for 20 minutes, or until the celery is tender.
