- 1 1/2 cups chocolate graham cracker crumbs

- 1 1/2 teaspoons vanilla extract
- 4 large eggs
- 1/2 cup Baileys Irish Cream
- 1/2 cup semisweet chocolate chips
- 1/2 cup heavy cream

Method
- Preheat oven to 325°F. Line the bottom of a 9-inch springform pan with parchment paper.
- In a mixing bowl, combine the chocolate graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Stir until well combined. Press the mixture firmly into the bottom of the prepared pan.
- In a large mixing bowl, beat the cream cheese until smooth. Add 1 1/4 cups granulated sugar, flour, and vanilla extract. Beat until well combined.
- Add the eggs one at a time, beating well after each addition. Stir in the Baileys Irish Cream.
- Pour the cheesecake batter over the crust in the prepared pan.
- Bake for 1 hour and 30 minutes or until the cheesecake is set.
- Remove the cheesecake from the oven and let it cool to room temperature.
- In a saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the semisweet chocolate chips. Stir until the chocolate is melted and the mixture is smooth.
- Pour the chocolate ganache over the cooled cheesecake.
- Refrigerate the cheesecake for at least 4 hours before serving.
