Ingredients

  • 8 oz. rice noodles

  • 1 cup sliced green onions
  • 1/2 cup roasted peanuts, chopped
  • 2 tbsp. fish sauce
  • 2 tbsp. tamarind paste
  • 2 tbsp. brown sugar
  • 1 tbsp. rice vinegar
  • 1/2 tsp. red pepper flakes
  • Lime wedges, for garnish

  • Large pot for boiling noodles

Method

  1. Soak the rice noodles in warm water for 15 minutes, then drain and set aside.
  2. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the chicken and garlic and stir-fry for 3-4 minutes until the chicken is cooked through. Remove from the wok and set aside.
  3. Beat the eggs in a small bowl and set aside.
  4. Heat another tablespoon of oil in the wok over medium-high heat. Add the eggs and scramble until they are cooked through. Remove from the wok and set aside.
  5. Heat the remaining tablespoon of oil in the wok over medium-high heat. Add the bean sprouts, carrots, and green onions and stir-fry for 2-3 minutes until they are tender.
  6. Add the cooked chicken and eggs to the wok and stir-fry for 1-2 minutes.
  7. Add the rice noodles to the wok and stir-fry for 2-3 minutes until they are heated through.
  8. In a small bowl, whisk together the fish sauce, tamarind paste, brown sugar, rice vinegar, and red pepper flakes. Pour the sauce over the noodle mixture and stir-fry for an additional 1-2 minutes until everything is coated and heated through.
  9. Divide the pad Thai among four plates and sprinkle with chopped peanuts. Serve with lime wedges on the side.
