Ingredients

  • 2 onions
  • 2 red peppers
  • 6 cloves of garlic
  • olive oil

  • 2 tablespoons tomato puree
  • 1 kg minced beef
  • 2 x 400g tins of kidney beans
  • 2 x 400g tins of chopped tomatoes
  • 1 beef stock cube
  • 1-2 fresh red chillies
  • 1 bunch of fresh coriander
  • salt and pepper

Equipment

Method

1. Peel and roughly chop the onions and garlic, deseed and roughly chop the red peppers. 2. Heat a large casserole pan on medium heat and add 2 tablespoons of olive oil. 3. Add the onions, garlic, and peppers to the pan and cook for 10 minutes, or until softened. 4. Add the ground cumin, smoked paprika, dried oregano, and ground cinnamon to the pan and cook for 1-2 minutes, or until fragrant. 5. Add the tomato puree and minced beef to the pan and cook until the meat is browned and cooked through. 6. Drain and rinse the kidney beans and add them to the pan, along with the chopped tomatoes and crumbled beef stock cube. 7. Fill up one of the empty tomato tins with water and add it to the pan. 8. Finely chop the chillies (remove the seeds if you prefer less heat) and add them to the pan. 9. Season with salt and pepper to taste. 10. Bring the chilli to a simmer and cook for 1 hour, stirring occasionally. 11. Finely chop the coriander and sprinkle it over the top of the chilli. 12. Serve with rice, sour cream, and grated cheese.
