- 10 dried red chilies, soaked and deseeded
- 6 shallots
- 4 garlic cloves
- 2-inch piece ginger
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 cinnamon stick
- 1 star anise
- 1 cardamom pod
- 1 nutmeg, grated

Method
- Blend the shallots, garlic, ginger, coriander seeds, cumin seeds, and fennel seeds in a blender or food processor until smooth.
- Heat the pot over medium-high heat and add the blended mixture, cinnamon stick, star anise, cardamom pod, and grated nutmeg. Stir for 2 minutes until fragrant.
- Add the beef and stir for 2 minutes until browned.
- Add the coconut milk, lemongrass, kaffir lime leaves, tamarind paste, salt, and sugar. Stir well.
