  • 2 teaspoons sugar
  • 1 cup water
  • 10 dried red chilies, soaked and deseeded
  • 6 shallots
  • 4 garlic cloves
  • 2-inch piece ginger
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 cinnamon stick
  • 1 star anise
  • 1 cardamom pod
  • 1 nutmeg, grated

Method

  1. Blend the shallots, garlic, ginger, coriander seeds, cumin seeds, and fennel seeds in a blender or food processor until smooth.
  2. Heat the pot over medium-high heat and add the blended mixture, cinnamon stick, star anise, cardamom pod, and grated nutmeg. Stir for 2 minutes until fragrant.
  3. Add the beef and stir for 2 minutes until browned.
  4. Add the coconut milk, lemongrass, kaffir lime leaves, tamarind paste, salt, and sugar. Stir well.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  6. In a blender or food processor, blend the soaked and deseeded dried red chilies until smooth. Add the chili paste to the pot and stir well.
  7. Simmer for another 30 minutes until the sauce has thickened and the beef is coated with the sauce.
  8. Remove the lemongrass, kaffir lime leaves, cinnamon stick, star anise, and cardamom pod before serving.
  9. Serve with steamed rice and garnish with fresh cilantro leaves.
