Ingredients

  • 2 eggplants, sliced
  • 4 potatoes, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 500g minced beef
  • 1 can of diced tomatoes
  • 1 tsp cinnamon
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 cup of breadcrumbs
  • 1 cup of grated Parmesan cheese
  • 2 cups of milk
  • 4 tbsp of butter
  • 4 tbsp of flour
  • 1 egg yolk

  • Frying pan
  • Saucepan

Method

  1. Preheat the oven to 200°C.
  2. Sprinkle salt on the eggplant slices and let them sit for 30 minutes to remove excess water. Rinse and pat dry.
  3. Heat a frying pan over medium heat and add the onion and garlic. Cook until softened.
  4. Add the minced beef and cook until browned.
  5. Add the can of diced tomatoes, cinnamon, oregano, thyme, bay leaf, salt, and pepper. Simmer for 20 minutes.
  6. In a saucepan, melt the butter over low heat. Whisk in the flour until smooth.
  7. Gradually add the milk, whisking constantly, until the sauce thickens. Remove from heat and whisk in the egg yolk.
  8. Layer the sliced potatoes on the bottom of the baking dish. Top with a layer of the beef mixture, then a layer of eggplant slices. Repeat until all ingredients are used up.
  9. Pour the béchamel sauce over the top of the moussaka.
  10. Mix the breadcrumbs and grated Parmesan cheese together and sprinkle over the top of the béchamel.
  11. Bake for 45 minutes to 1 hour, or until the top is golden brown and the moussaka is cooked through.
  12. Let cool for 10 minutes before serving.

Notes

Moussaka is even better when reheated the next day, as the flavors have had time to meld together. You can also freeze it for up to 3 months.
